If you’ve stopped by Starbucks recently, you’ll know that the Pumpkin Spice Latte is back! I love a good PSL but when I found out that a Grande PSL with 2% milk and whipped cream is 380 calories and the PSL with no whip and nonfat milk is still 260 calories, I started to rethink that splurge. The holiday season is sneaking up on us and between Thanksgiving and holiday parties, it’s so easy to over-consume calories and not even be aware of it. I decided that I needed to come up with a quick and easy pumpkin spice latte at home! (It turned out AMAZING if I do say so myself and is less than 40 calories)
I have an espresso machine but it really doesn’t get used often (lack of motivation to learn how to properly use it #lazy) and a drip coffee pot that I LOVE. Since most people at home have drip coffee makers or Keurig machines, I decided to use that as the base instead of espresso. Just pick something good and strong (or not, that’s okay too!). I made one stop at Trader Joe’s and got everything I needed!
Skinny Pumpkin Spice Latte Recipe
You’ll need to gather the following items:
- 1 cup almond milk
- 1 1/2 tsp. liquid stevia
- 1 tbsp. pumpkin puree
- 1 tsp. pumpkin pie spice
- 1/2 tsp. vanilla extract
- Freshly brewed coffee (amount is up to you, I used 2 cups)
Start brewing your coffee (if you’re using K-cups, hold off on this so your coffee is still crazy hot when the syrup is done!)
While the coffee is brewing, mix all of the other ingredients in a small saucepan (the smallest you have!) and simmer over low heat for 10 minutes or med-low for 5 minutes. The longer you let the syrup simmer the stronger the pumpkin will taste. When you’re ready, make/pour your coffee and add your pumpkin spice syrup and whisk/stir till you see some foam.
If you want to add a little whipped cream, go for it and don’t feel guilty! (1 tbsp only adds about 20 calories!)
